We aim to continuously improve the food offerings in our cafeteria, making them healthier, more locally sourced, and more environmentally conscious. That is why we are participating in the LINSE research project.
The project focuses on incorporating more legumes from regional producers into dishes served in the German foodservice sector. Local agriculture is strengthened through the use of regional value chains. Furthermore, legumes are rich in protein, vitamins, and minerals, making them a valuable, nutrient-dense alternative to meat. Reducing the amount of meat in dishes lowers CO2 emissions. Initial successful tests have already been conducted at the University of Kassel and Osnabrück University of Applied Sciences.
We have forwarded the data from our cafeterias to the project team and look forward to the evaluation, as well as to the continued positive and even healthier development of our dishes.
